I spent Thursday doing some Christmas baking for the cookie exchange I hosted yesterday morning. I like the cookie exchange idea because I like the variety I get without all the work of making lots of different things. Six of my friends came and brought dozens and dozens of yummy and beautiful cookies. Here’s what I made:
Gingerbread men from Esther Shank’s cookbook (not a terribly sweet cookie and stays soft–I don’t like crispy gingerbread), caramel-filled chocolate cookies (yummm–my new favourite!), white chocolate cranberry cookies (a make-every-year staple recipe), and cranberry apple muffins (part of the snack I served; a new recipe that I’m sure I’ll use again–I did leave out half the coriander).
Now what I really, really, really need to do is get my cookie loot in the freezer so I quit eating (or being severely tempted to eat) one every time I walk through the kitchen!

Looks like Lincoln enjoyed his time by the looks of the snacks! =)

Mmm…if I wasn’t cookied-out (just made another 5 doz. choc. chip this morning to replace the flopped 5 doz. I made on Thurs. night – never use light margarine to make cookies. I found out the hard way.), I’d be tempted to make those caramel-filled ones!

Hmmm…all of those cookies have light margerine in them. Well, I guess the caramel chocolate ones technically have light butter. That’s all Sharp Shopper had last week! Glad mine didn’t flop
